Chocolate Coffee Cupcakes

This Chocolate Coffee cupcakes is another one of my quick ” I need a cupcake/dessert right now ” . I like to have my chocolatey treats as quick as possible and this recipe thankfully delivers on taste and as well as speed :).

So starting off  in a large mixing bowl I melted the darked chocolate. While that was melting i gathered all my ingredients.


Not pictured is the chocolate which was of course  melting away but basically this is what you need cocoa 2tbsp, butter about 1tbsp, 2 eggs, instant coffee, b.soda and 4tbsp oat flour and as i always say you guys can substitute the oat flour with any flour you have available.

So melt the chocolate and when its melting add in 1 tbsp of butter and emulsify both of the ingredients.

procedure 1Take the chocolate of the boiling water  when the chocolate has fully melted  and let it cool for a while before adding  in 2 eggs. Whisk it until it achieves a glossy texture.

When that is  done  go ahead and add in the dry ingredients (cocoa, coffee, oat flour and b.soda).dry

I’ve noticed adding the extra cocoa on top of the chocolate  really brings out the coffee flavours and intensify’s it.

Scoop out the cupcake batter into your baking tray and bake for 15-20 mins or until you poke it with a knife it comes out clean.

And there you have it your daily shot of coffee and  chocolate all ready in one cupcake.
Serve with a glass of milk. The cupcakes if any of them are leftover store in an airtight container.
